Cradle Shiraz is our Company bench mark, it epitomises all that is great about wine making. Not every vintage will result in a Cradle Shiraz year, only those vintages that meet the strict criteria of excellence. The wine was prepared by cold soaking on skins for four days prior to a long slow ferment in small traditional open vats. The ferment was hand plunged and maturation was in American Oak Hogsheads over 16 months. The resultant wine is dark burgundy in colour with a dark plum hue, the wine exhibits a pronounced mint and dark chocolate bouquet. The palate is savoury, laced with black olives, eucalypt and smoky tobacco. The tannin structure is firm carrying minty, blackcurrant and white pepper flavours right through to the finish. Our 2007 Chardonnay is light golden in colour with a soft bouquet of fruit flavours and an undertone of oak, it displays typical Hunter Valley characteristics of lifted tropical fruit flavours, this vintage again dominated by ripe melon and peach undertones, the structure has a rounded mouth feel with good balance and length.
